Peel, wash and grate red pumpkin. Wash, core and roughly chop apples. Peel wash and roughly chop onion. Clean, wash and chop parsley. Heat oil in a pan, add bay leaves and onion and saute till translucent. Add pumpkin and apples. Cook on high heat for a couple of minutes stirring continuously. Add three-fourth cup of vegetable stock and cook vegetable till soft. Cool vegetables, discard bay leaves and blend into a puree in a mixer. Heat pureed vegetables and add another three-fourth cup of vegetable stock and milk. Mix well and bring to a boil. Add lemon juice, salt, curry powder and pepper powder. Serve hot garnished with parsley. |
