Easy Broccoli & toasted almond soup Recipe

Ingredients for Broccoli & toasted almond soup
  • Broccoli 400 gms
  • Onion 1 medium sized
  • Garlic 4 cloves
  • Celery 2 inch stalk
  • Almonds 10-12
  • Low fat milk 1 cup
  • Salt to taste
  • White pepper powder to taste

Method to prepare Broccoli & toasted almond soup

Cut broccoli into small florets and wash well. Soak in salted water for ten to fifteen minutes and drain.
Peel, wash and roughly chop onion and garlic. Trim, wash and chop celery stalk.
Broil or dry roast almonds on medium heat till almond skin changes its colour slightly. Remove from heat, cool and slice into slivers.
Heat four cups of vegetable sock or water with onion, garlic and celery. Bring it to a boil.
Add broccoli florets and cover pan. Continue to cook for five to seven minutes or till broccoli is just done.
Remove form heat, cool and puree in a blender.
Add milk to pureed broccoli and mix well. Bring to a boil again.
Add salt and white pepper powder to taste. Stir in toasted almond slivers and serve hot.
