Easy Shanghai chicken Recipe

Ingredients for Shanghai chicken
  • Small diced chicken 100 gms
  • Eggs 2
  • Diced capsicum 25 gms
  • Diced onion 25 gms
  • Mushroom 20 gms
  • Celery 18 gms
  • Red chilly 20 gms
  • Broken cashew 5 gms
  • Chilly sauce 8 gms
  • Tomato ketchup 12 gms
  • Soya sauce 5 ml
  • Vinegar 5 ml
  • Chilli oil 4 ml
  • Corn flour 10 gms
  • Chicken stock 40 ml
  • Salt to taste
  • White pepper to taste
  • Ajinomoto 3-4 gms

Method to prepare Shanghai chicken

Marinate the chicken with cornflour, salt and 2 eggs, put little soya sauce and mix.
Deep fry the chicken.
Saute chilli paste. Add ketchup. Put red chillies and vegetables. Add chicken.
Season with salt, pepper powder, soya sauce, ajinomoto and very little sugar.
Add cornflour mix.
Add little vinegar and chilli oil.
Serve hot.
