Clean, wash and roughly chop coriander and mint leaves. Remove stems, wash, deseed and chop green chillies. In a mixer, process chopped coriander and mint leaves with chopped green chillies. Make a smooth paste using a little water if required and remove. Ad black salt and sugar. Remove into a bowl and mix in the lemon juice.
Variation Add yogurt to the chutney and mix properly (one cup yogurt for two tablespoons of chutney).
Chef\'s Tip To add sourness you can use crushed dry pomegranate seeds or dry mango powder (amchur) instead of yogurt and lemon juice. N season raw mango is a good substitute. |
