- Mangoes (ripe) 2 medium sized

Watermelon ¼ medium sized

| Method to prepare Scoopy fruit caramel |
Wash, cut mangoes and remove seeds. Wash, cut watermelon, muskmelon and papaya. Scoop put fruits (discarding the seeds) with a Parisienne scoop and place in a glass bowl. Blanch almonds in one cup of warm water. Drain, peel and cut into slivers. Combine Sugar and honey in a pan. Place on low heat and cook, stirring continuously, till sugar melts and gets completely blended with honey. Remove from heat. Add half a cup of water and fruit juice to the honey-sugar blend. Stir in gulkand. Add this to the fruit scoops bowl in the refrigerator to chill. To serve, take a beer mug or a glass bowl. Make a layer of fruit scoops, place a scoop of vanilla ice-cream topped with almond slivers, dribble some strawberry sauce. Top this with a second layer of fruit scoops, covered with a scoop of butterscotch ice-cream and top it up with chocolate sauce. Garnish with almond slivers and water biscuits. Decorate with a small paper umbrella and serve immediately. |
