Wash and boil green peas for five minutes. Refresh in cold water and grind to a fine paste. Wash prunes and remove seeds. Stew them in a cup of hot water for ten minutes. Roughly chop and keep aside. Wash and pat dry raisins and rose petals. Slice pistachios. Heat ghee in a thick-bottomed pan, add green peas and cook for a few minutes, stirring continuously. Keep aside. Boil milk with rose petals. Simmer for then minutes on low heat and strain the milk. Add milk to prepared green peas paste. Bring to a boil. Cook on low heat for fifteen to twenty minutes or till milk is reduced to half. Trim the edges of bread slices. Discard edges. Soak bread slices in water. Squeeze out the water completely and add this to the milk and peas mixture. Mix well. Add sugar, green cardamom powder and raisins. Cook for about ten minutes on low heat. Take off the heat and set aside to cool. Add prunes to the cooled peas kheer and serve chilled topped with sliced pistachios. |
