This low fat dish was traditonally made with leftover meat--usually lamb or beef.
Low Fat English Pie
Serves-6
INGREDIENTS:
Canola oil-1 tbsp Onion, finely chopped-1 Carrots, chopped-2 Ground beef or lamb-3/4 pound Sweet corn-1/2 cup Worcestershire sauce-2tbsp Tomato paste-(no salt added)-2tbsp Dried mixed herbs-2 tsp Fat-free, reduced sodium beef broth-1 cup Frozen peas-1 cup . For the Topping: Boiled potatoes, peeled and cut-2 pounds Fat-free milk-1/2 cup Light butter-1 tbsp
Method
In a large pot, heat canola oil on medium-low heat. Saute onions and carrots until softened. Turn up heat to medium-high and add beef; cook until no longer pink. Add Worcestershire sauce, tomato paste, herbs and broth. Reduce heat and simmer uncovered for 15 minutes. Add peas,sweet corn then simmer 5 minutes more. Add milk and light butter to the boiled potatoes. Mash with a potato masher until smooth. Season.
Pour sauce into a baking dish and allow to cool slightly. Top with potato.
Bake in a preheated 400 degree oven for 20-25 minutes.
