Low Fat Grilled Chicken Salad
Serves -6
Ingredients For the salad:
Thinly sliced red onion rings-1/2 cup Sugar snap peas-1 1/2 cups Dried cranberries-1/4 cup Freshly ground black pepper-1/2 teaspoon Fresh arugula leaves-1 bunch
Ingredients For the marinade:
Boneless, skinless chicken breast halves-3 pounds Asian sesame oil-1 tablespoon Soy sauce-1 1/2 tablespoons Juice of 1/2 lemon Dried red-pepper flakes-1/2 teaspoon Dijon mustard-2 teaspoons Dry white wine-1/4 cup 1 large clove of garlic, minced
Ingredients For the dressing:
1 clove of garlic Asian sesame oil-1 tablespoon Soy sauce-2 tablespoons Sherry vinegar-2 tablespoons Olive oil-1/3 cup
Method
In a bowl, whisk together the marinade ingredients and pour over the chicken. Marinate, covered, for at least 3 hours or overnight in the refrigerator.
Grill chicken on a well-oiled grill over hot coals or under a broiler, turning the pieces until just cooked through, about 4 to 5 minutes per side. Cut chicken into bite-sized strips and place in a large bowl.
Using a food processor, puree the dressing ingredients until smooth; pour over the chicken. Add cranberries, onion rings and snap peas. Season with pepper.Add the arugula and toss lightly.
