Easy Hummingbird Cake Recipe

Ingredients for Hummingbird Cake
3 cups of plain flour
2 cups of sugar
1 teaspoon of baking soda
1 teaspoon of salt
1 teaspoon cinnamon
2 cups of chopped pecans
1 1/2 cups of vegetable oil
3 eggs
1 1/2 teaspoons of vanilla
1 – 8 ounce can of crushed pineapple
3 bananas, mashed

For The Frosting:
1 – 4 ounce package of cream cheese (at room temperature)
1/2 stick of butter
1 teaspoon of vanilla
1/2 box of 10X powdered sugar

Method to prepare Hummingbird Cake

Place all of the dry ingredients in a large bowl. Add all of the other ingredients and stir until mixed well. Do not beat. Pour into a greased and floured tube pan. Bake at 325 degrees for 1
hour and 15 minutes. Remove from the oven and allow to cool in the pan.

For The Frosting:
Mix all of the frosting ingredients together and beat by hand until smooth and creamy. Spread over the cooled cake.
