Rock Candy Recipe

Easy Rock Candy Recipe

Ingredients for Rock Candy
1 Cup Water
2 Cups Sugar
Candy Thermometer (Other types of thermometers will not work)
Saucepan
Long-Handeled Wooden Spoon
1 Pint Glass Canning Jar
1 Clean Popsicle Stick
1 Clean Piece of String (Should be as long as the jar is tall)
Method to prepare Rock Candy
  1. Dip the string into the cup of water and remove
  2. Roll moistened string in sugar
  3. Tie the sugar coated string around the popsicle stick and place the stick over the top of the jar so that the string hangs down inside (make sure that the string does NOT touch the bottom of the jar or else your string will get stuck to the bottom when the crystals start to grow)
  4. Bring the cup of water to a rolling boil over a stove
  5. Stir in the 2 cups of sugar
  6. Continue cooking the solution until the candy thermometer reads 240°F (165.3°C). If the temperature is too low, the sugar will not crystallize into rock candy. If the temperature is too hot, the entire solution will harden into a large crystalline mass.
  7. Remove solution from heat. (If you wish to add coloring to your rock candy, add 2-3 drops to the solution now.)
  8. Carefully pour solution into glass jar
  9. Place the uncovered jar in a place where it won\'t be disturbed
You should notice crystals beginning to grow on the string within a few hours. The rock candy crystals usually grow large enough to make an enjoyable treat after about 24 hours. Simply pull the string of crystals from the jar, rinse briefly in cold water to remove excess syrup and enjoy!
