| Ingredients for Velvet Cheesecake with Fresh Strawberries |
Crust: 1 1/2 cups graham cracker crumbs 1 cup ground brazilian nuts 1/4 cup + 2 Tbsp. Wild Oats Organic Butter, melted 2 Tbsp. light brown sugar
Filling: 32 oz. cream cheese, softened 8 oz. light brown sugar 1/4 cup Grand Marnier 1/4 cup heavy cream 2 tsp. vanilla extract 5 Wild Oats Organic Egg yolks
Topping: 1/4 cup light brown sugar 1 tsp. vanilla extract 1 Tbsp. Grand Marnier 2 cups sour cream
Garnish and glaze: 3 pints Wild Oats Organic Strawberries 1/2 cup Wild Oats Organic Apricot Spreadable Fruit 1 Tbsp. Grand Marnier

| Method to prepare Velvet Cheesecake with Fresh Strawberries |
1. Preheat an oven to 350°F. Combine the graham cracker crumbs, ground nuts, melted butter, and brown sugar in mixing bowl and mix until completely moistened. 2. Butter the bottom and sides of a 9\" springform pan. Press the crumb mixture onto the bottom and sides of the pan and bake in the oven for approximately 8-10 minutes. Remove from the oven and allow to cool completely before filling. 3. While the crust is cooling, combine the softened cream cheese, brown sugar, Grand Marnier, heavy cream, and vanilla. Using an electric mixer beat until all ingredients are thoroughly combined and mixture is completely smooth. Beat in the egg yolks until incorporated. Pour the cheesecake filling into the cooled crust and return to the oven for approximately 50-60 minutes. Remove from the oven and allow to cool for 20 minutes. 4. While the cheesecake is cooling, combine the brown sugar, vanilla, Grand Marnier, and sour cream. After 20 minutes, spread the sour cream mixture over the cheesecake and return to the oven for an additional 5 minutes to set. Remove the cheesecake from the oven and place into refrigeration to completely cool. 5. Once the cake has completely chilled, remove from refrigerator and remove from the springform pan. Cap the fresh strawberries and arrange in concentric circles around the top of the cheesecake. Heat the apricot preserves and Grand Marnier in a small saucepan to form a glaze. Using a pastry brush, brush the berries with the apricot glaze. Allow the glaze to set in refrigerator. 6. Serve cheesecake slightly chilled.
