2 Green peppers, medium ½ Cup grated cheddar cheese (about 2 ounces) 1 Cup cooked rice ¼ Teaspoon salt Dash pepper

| Method to prepare Cheese \'n\' Rice Stuffed Pepper |
Preheat oven to 300o F. Slice off tops of green peppers. Wash peppers and remove seeds. Stand pepper cups upright in saucepan containing ½ cup boiling water. Cover and steam 5 minutes. Drain. Mix together cheese, rice, salt, and pepper. Fill each pepper with half of cheese mixture. Stand peppers in loaf pan. Bake for 10 or 15 minutes until cheese melts.
Variation : cook rice in tomato juice or broth instead of water. Add 2 tablespoons chopped onion or fresh parsley in step 3. This will raise the sodium content of the recipe.
