For : 4 servings Serving Size : ¾ cup plus ¾ cup rice
¼ Cup chopped onion ¼ Cup chopped green pepper 1 Garlic clove, minced 2 Tablespoons vegetable oil 3 Tablespoons flour 1 Teaspoon chili powder 1 Teaspoon slat Dash of pepper 2 Cups canned tomatoes (1 16-ounce can) 2½ Cups cooked cleaned shrimp (1 16-ounce bag frozen, ready to cook) 2 Cups cooked rice

| Method to prepare Shrimp Creole |
Saute onion, green pepper, and garlic in oil until tender. Blend in flour and seasonings. Add tomato and cook until thick, stirring constantly. Simmer for 20 minutes. Add shrimp. Heat through. Serve over hot rice. |
