For : 3 cups (4 servings) Serving Size : ¾ cup
1 Tablespoon margarine ¼ Cup skim milk 2 Slices soft bread, crumbled 1 1-Pound can pink salmon or mackerel, drained and flaked 1 Egg, separated 1½ Tablespoons lemon juice (optional) 1 Tablespoon minced onion Dash of peppercorns Dash of paprika 2 Tablespoons chopped fresh parsley

| Method to prepare Salmon Souffle |
Preheat oven to 325o F. Mix all ingredients except egg white, paprika, and parsley. Beat egg white until stiff; fold into salmon mixture. Pour into 1-quart casserole sprayed with vegetable pan spray. Bake uncovered for 50 to 60 minutes. |
