Easy Vegetable and Meatball soup Recipe

Ingredients for Vegetable and Meatball soup

For: 5 cups (4 servings)
Serving size: 1¼  cup,
with 2 meatballs

½ Medium onion, chopped
1  Medium carrot, chopped
½ Cup Chopped celery
1 Tablespoon vegetable oil
1 Medium tomato, peeled and chopped
¼  Teaspoon ground ginger
¼  Teaspoon cumin
¼  Teaspoon paprika
1 Tablespoon chopped fresh parsley
1 Quart beef  broth
¼ Cup tomato sauce
¼ Cup dry lentils (uncooked)

Meatballs

½ Pound ground lamb
3 Tablespoons beef stock
1 Tablespoon flour
½  Teaspoon salt
1 Garlic clove, crushed
1 Teaspoon chopped parsley


Method to prepare Vegetable and Meatball soup
Saute onion, carrot, and celery in oil until tender.
Add remaining ingredients except meatballs.  Simmer 30
minutes.
Make 8 meatballs with remaining ingredients.  Add to soup.
Simmer 15 minutes or until meat is done.
