For : 3 cups (4 servings) Serving Size : ¾ cup 1 Pound lean lamb, cubed, trimmed of fat ½ cup chopped onion 1 Clove garlic, minced (optional) 1 Tablespoons margarine 2 Teaspoons curry powder ¾ Teaspoons salt ¼ Teaspoon ground ginger 1 Medium tomato, peeled and chopped 1½ Tablespoons flour 1 Cube beef bouillon 1 Cup boiling water ½ Cup grated carrot 2 Cups cooked rice

| Method to prepare Curried Lamb on Rice |
Brown lamb, onion, and garlic in margarine. Add curry powder, slat, ginger, tomato, and flour. Mix well. Dissolve bouillon cube in water; sir into meat. Cover and simmer 30 to 40 minutes or until lamb is tender. Stir occasionally. Toss rice with grated carrot. Serve lamb over rice.
