1 Pound beef sirloin ½ Cup vinegar 2 Tablespoons salad oil 1 Medium onion, chopped 2 Tablespoons chopped fresh parsley ½ Teaspoon salt 1/8 Teaspoon pepper 1 Green pepper, cut in wide strips 6 Small tomatoes, halved

Trim fat form met. Cut m,eat into 1 ½ -inch cubes. Mix vinegar, oil, onion, parsley, salt, and pepper. Marinate meat in mixture for 2 hours, stirring occasionally. Remove meat and alternate on 4 skewers with green pepper and tomatoes. Brush with marinade. Broil 4 inches form heat about 10 minutes, turning once.
Variations: If you do not have skewers, the shish kabob ingredients may be broiled in a pan. Follow steps 1 and 2 above. Then arrange meat, pepper, and tomato separately in pan. Sprinkle 1 teaspoon of marinating mixture on vegetables; broil until tender, stirring once. Arrange on platter for serving. |
