Easy Cucumber Soup Recipe |
| Ingredients for Cucumber Soup |
For: 3 cups (4 servings) Serving Size: ¾ cup
2 Tablespoons margarine 2 Tablespoons flour 1 Cup chicken broth 1 Cup evaporated skim milk 2 Tablespoons chopped fresh chives 2 Tablespoons chopped celery leaves 2 Tablespoons chopped fresh parsley 1 Large cucumber, peeled 2 Tablespoons water

| Method to prepare Cucumber Soup |
Melt margarine in saucepan over low heat. Blend in flour. Slowly add broth and milk, stirring constantly. Cook, stirring, until smooth and thickened. Stir in chives, celery,and parsley. Remove from heat. Puree cucumber in blender with 2 tablespoons water. Slowly stir into sauce. Heat until just warm or serve chilled. Excessive heat may cause soup to curdle. |
