Most foods have some naturally occurring sodium as well as that added in processing. But eh major source of dietary sodium is sodium chloride (table salt). Sodium chloride, or salt, is frequently eaten in excess. Under unusual conditions, if the kidneys (which rid the body of wastes) cannot get rid of the excess sodium, the sodium may make the body cells retain fluid. Fluid retention, in turn, may aggravate high blood pressure and other medical problems.
If a doctor suggests sodium restriction, a diet counselor can help you avoid foods that should not be used and can help you switch seasonings creatively.
If you are afraid that omitting salt will make the foods you serve taste flat or bland, don't despair. Herbs and spices open a whole new world of flavor and aroma. To enhance a low-salt or salt-free dish, use herbs and spices in combination or alone.
Experiment; be creative. But remember it is easier to add more than to take some out if you've added too much. A simple rule of thumb is to add a small amount at a time and taste.
