| Ingredients for Strawberry Shortcake |
For: 8 servings Serving Size: ½ cup berries and 1 biscuit
1 Quart fresh strawberries 2 Tablespoons sugar 1 Tablespoon water 8 Baking powder biscuits, 2-inch diameter (see index)

| Method to prepare Strawberry Shortcake |
wash, drain, and hull strawberries; cut in halves or quarters. Add sugar and water. Refrigerate 2 hours. Split biscuits. Allowing ½ cup of berries per serving, layer half (¼ cup)of berries over bottom of biscuit. Replace top an add remaining berries. Suggested toppings: 2 tablespoons sour cream or 2 tablespoons whipped cream (without sugar)=1 additional Fat Exchange; 1 tablespoon plain yogurt or 2 tablespoons whipped topping (p.280)=free. |
