Diet Recipes > Quick Bread Recipe with Almond and Apricot

This Bread Recipe with Almond and Apricot is a no yeast quick bread recipe for makign flavoured bread. You can make it just in the morning, for breakfast.

We all like fruit and nut flavoured quick breads. This one, is a personal favourite of mine. The quick almont nut and orange bread if full of wholesome goodness of fruits, nuts and fibre.

What would I need to make Quick Bread  with Almond and Orange?

  • About 12 ounces of canned apricot halves, divided
  • About 2 cups of flour , maybe a little less as you feel.
  • A teaspoon baking powder
  • Half teaspoon of baking soda
  • Half teaspoon of salt
  • Less than half cup shortening
  • About half a cup of sugar
  • Two fresh eggs
  • half a  cup of toasted almonds

Grease and flour a rectangular pan, ( I use an 8 X 6 inches pan ). Get your oven ready to 350 deegrees F.

Drain the apricots but save the syrup. Take half apricots and cut each into 6 pieces. Set aside. Puree other half apricots in food processor. Add enough syrup to make half cup. Whisk together flour, baking powder, soda, and salt.

In a large bowl, cream together shortening and sugar. Add eggs one at a time, and beat fill fluffy. Add apricot puree. Mix in dry ingredients until just moistened. Gently stir in apricot pieces and nuts. Spread batter into prepared pan.

Bake for 45 to 55 minutes.

Remove from pan, and cool on a rack.

Ready for Breakfast ? :)
