Ingredients for Southern Spoon Bread

For: 3 cups (6 servings)
Serving Size : ½ cup

1 Cup boiling water
½ Cup cornmeal
½ Cup skim milk
½  Teaspoon slat
1½ Teaspoons baking powder
1 Tablespoon vegetable oil
2 Eggs, separated


Method to prepare Southern Spoon Bread
Preheat oven to 375o F.
Pour boiling water over cornmeal; stir until smooth.
Beat in remaining ingredients, except egg whites.
Beat egg whites until stiff; fold into mixture.
Turn into 1 ½ -quart casserole sprayed with vegetable pan spray.
Bake for 25 to 30 minutes until set.
Spoon into serving dishes.
