Wash and boil peas in one cup of salted water. Drain and refresh under running water. String, wash and cut French beans into diamonds each side measuring half inch. Wash and separate cauliflower into small florets. Wash, deseed and cut capsicum into half inch sized dices. Peel, wash and slice carrot diagonally in half centimetre thick pieces. Clean, wash and slice mushrooms thickly. Remove stems, wash and finely chop spring onions. Place cauliflower, French beans and carrot in a pan with one cup of water and cook for seven to eight minutes. Remove, drain and keep aside. Heat oil in pan and add green chillies, spring onions and capsicum. Stir-fry for two three minutes on high heat. Add peas, cauliflower, French beans, carrot, mushrooms, mustard paste, red chilli sauce and fresh cream. Season with salt and pepper and cook for two to three minutes on high heat. Serve hot. |
