Easy Sweet sour paneer and pineapple Recipe

Ingredients for Sweet sour paneer and pineapple
  • Cottage cheese (paneer) 300 gms
  • Oil 2 tbsps + to deep fry
  • Cornstarch 4 tbsps
  • Onion 1 medium sized
  • Ginger ½ inch piece
  • Garlic 2-3 cloves
  • Capsicum 1 medium sized
  • Pineapple slice 1
  • Tomato sauce 3 tbsps
  • Sugar 2 tbsps
  • Pineapple juice ½ cup
  • Ajinomoto ¼ tsp
  • White pepper powder ½ tsp
  • Salt to taste
  • Vegetables stock 1 ½ cups
  • White vinegar 3 tbsps

Method to prepare Sweet sour paneer and pineapple
Cut paneer into diamond shaped medium sized pieces. Heat sufficient oil in a wok, roll paneer pieces in two tablespoons of cornstarch and deep fry on medium heat till edges start to turn brown. Drain onto an absorbent paper.
Peel and wash onion, cut into quarters and separate th layers. Peel, wash and finely chop ginger and garlic. Wash, halve, deseed and cut capsicum into one inch sized pieces. Cut pineapple slice into one inch sized pieces. Cut pineapple slice into one inch sized pieces. Blend remaining cornstarch in one cup of water.
Blend tomato sauce, sugar, pineapple juice, Ajinomoto, white pepper powder and salt to taste in one cup of vegetable stock.
Heat two tablespoon of oil in a wok or a pan, add ginger and garlic and stir-fry briefly. Add onion and continue to stir fry for a minute.
Stir sauce and spice mix, remaining vegetable stock and blended cornstarch. Cook for a couple of minutes or till sauce starts to thicken, stirring continuously.
Add fried paneer, pineapple and capsicum. Cook for a minute more or till sauce coats the paneer pieces. Stir in vinegar and serve hot.
