Wash, wipe and cut head and tail of lady fingers. Cut each into two or three pieces depending on the size. Remove stems, wash and finely chop green chillies. Peel, wash and finely chop ginger. Peel, wash and slice onion thinly. Crush fennel seeds and fenugreek seeds lightly. Heat oil in a pan and add cumin seeds. As they begin to change colour add onion, ginger and green chillies. Stir fry till onion turns pinkish. Add fennel seeds and fenugreek seeds and mix well. Continue to cook for one minute. Add lady fingers and sprinkle salt. Cook, covered, on medium heat till done. Add coriander powder, amchur and red chilli powder. Toss well. Serve hot. |
