Easy Garlic vegetables with cashewnuts Recipe

Ingredients for Garlic vegetables with cashewnuts
  • Cashewnuts 12-16
  • Bamboo shoots 2-3 slices
  • Carrot 1 medium sized
  • Snow peas 8-10
  • Chinese mushrooms (dried) 3-4
  • Capsicum 1 medium sized
  • Broccoli ¼ medium sized
  • Spring onions 2
  • Garlic 10-12 cloves
  • Cornstarch 2 tbsps
  • Corn kernels ½ cup
  • Oil 4 tbsps
  • Star anise 1
  • Ajinomoto ¼ tsp
  • White pepper powder ¼ tsp
  • Salt to taste

Method to prepare Garlic vegetables with cashewnuts
Broil or dry roast cashewnuts in a pan on medium heat for two to three minutes (or until they are light brown in colour and crisp) tossing continuously.
Soak bamboo shoot slices in two cups of hot water for ten to fifteen minutes. Drain well and cut into one inch sized pieces. Wash, peel, halve and cut carrot into one inch sized pieces. String, wash and cut each snow pea into two.
Soak Chinese mushrooms in sufficient hot water for ten to fifteen minutes. Drain well and cut into quarters. Wash, halve, deseed and cut capsicum into one inch sized pieces.
Wash, trim and cut broccoli into medium sized florets. Wash, trim and slice spring onions. Chop spring onion greens and reserve for garnish. Peel, wash and finely chop garlic. Blend cornstarch in one cup of water.
Boil corn kernels in one cup of water for two to three minutes or until almost kooked. Drain and keep aside.
Heat oil in a wok. Add star anise, garlic and stir-fry briefly. Add sliced spring onions, carrot, Chinese mushrooms and continue to stir-fry for a couple of minutes more.
Add bamboo shoots, capsicum and broccoli. Cook for a minutes on high heat, stirring continuously.
Stir in one and a half cups of water and bring to a boil. Reduce heat and add Ajinomoto, pepper powder, salt and mix well. Add snow peas, corn kernels and cook on high heat, stirring continuously for a minute more.
Stir in blended cornstarch and toasted cashewnuts. Cook for a minutes or till sauce thickens. Serve hot, garnished with chopped spring onion greens.
