Easy Irish Soda Bread Recipe

Ingredients for Irish Soda Bread
For: 16 wedges
Serving Size : 1 wedge
2 Cups plus 2 tablespoons sifted flour, divided
2 Teaspoons baking soda
1 Teaspoon salt
2 Teaspoons sugar
2 Tablespoons margarine
½ Cup currants
1 Tablespoon grated orange rind
½ Tablespoon caraway seeds (optional)
¼ Cup vinegar
¾ Cup skim milk

Method to prepare Irish Soda Bread
Preheat oven to 375o F.
Sift together into mixing bowl 2 cups flour, baking soda, slat,
and sugar.
Cut in margarine with pastry blender until mixture resembles
coarse cornmeal.  Add currants, orange rind, and caraway seeds.
Set aside.
Combine vinegar and milk.  Add ½ of the liquid to the dry
ingredients.  Blend quickly.  Ad remaining liquid and stir only
until blended.
Turn dough onto floured surface using 2 tablespoons flour.
Knead dough 10 times and shape into round loaf.  Place in
8-inch round pan sprayed with vegetable pan spray.
Bake for 30 to 35 minutes.  Remove form oven and cool on wire
rack.
Cut in wedges to serve.
