For:12 servings Serving Size: 2 ¼-by-2 ¼-inch slice 1 Cup yellow cornmeal 1 Cup sifted flour 1 Tablespoon baking powder ½ Teaspoon slat ¾ Cup skim milk 2 Eggs, slightly beaten 3 Tablespoons vegetable oil

| Method to prepare Cornbread |
Preheat oven to 425o F. Combine dry ingredients. Add milk, eggs, and oil. Blend well. Pour into 9-X 9-inch baking pan sprayed with vegetable pan spray. Bake for 20 to 25 minutes. Cut into 12 portions. Serve warm.
