Grill bread slices on one side, cut them into triangles and keep aside. Trim, clean, and wash spinach leaves well. Heat three cups of water to boiling point. Dip spinach leaves and drain in thirty seconds. Let cool and chop finely. Peel, wash and chop onions and garlic. Heat butter in a pan, saute onions and garlic for half a minute. Add spinach and saute for a minute. Stir in white sauce and adjust seasoning. Spread mixture on plain side of bread slices. Top each with grated cheese and grill them in an oven or a griller till cheese melts or turns golden brown. Serve hot with tomato ketchup. |
