Wash and boil potatoes. Cool and peel. Clean and wash coriander leaves. Remove stems, wash and chop green chillies. Make a smooth paste of coriander leaves and green chillies using a little salt. Mash potatoes well and knead into a dough adding coriander-green chilli paste and rice flour. Add sesame seeds and adjust salt. Mix well. Apply a little ghee on your palms and shape dough into a smooth ball. Break off portions and place in sev maker, which has the star (chakli) plate. Gently press out spirals on small pieces of paper. Heat sufficient oil in a kadai till moderately hot. Drop chaklis one by one and fry till golden and crisp. Drain onto an absorbent paper. Cool and store in an air-tight container. |
