A royal and traditional dish prepared with apricots.Make your Diwali special with this very special recipe.
Khubani Ka Meetha
Ingredients
Dry Apricots (Khubani) - 1 kg Sugar - 250 gms
Method Wash and Soak the apricots for 3 hrs. Drain out the water. Add fresh water and boil the apricots till soft. Remove from flame. Drain out water. Mash the boiled apricots and remove the seeds and keep aside. Pass the pulp through a sieve so that the fibrous portion is separated from the pure pulp. Put the pulp in a container and keep for heating. Let it heat till a boil or two. Stir continuosly. Add the sugar to it and mix well. Let it heat for 2 minuts more. Remove from flame. Pour it in a serving container. Refrigerate after cooling. Serve with Vanilla Ice Cream or fresh cream with some vanilla essence in it. Break open the seeds and use the almonds to top it before serving.
