Peel, wash and chop onions and garlic. Clean, wash and chop coriander leaves. Tri, wash and chop celery finely. Wash potatoes with the skin and wrap in aluminium foil. Preheat oven to 200o C. Bake potatoes for thirty to forty minutes or till done. Remove a small bit of foil an potato skin from the top. Make a hole in the potato by scooping out a bit from the center. Heat butter. Add onions, garlic and celery. Saute till onions turn golden brown. Add corn and saute for three to four minutes. Add salt, pepper powder and paprika powder. Add coriander leaves and fresh cream. Stir well and allow it to cool. Once it is lukewarm, put this mixture in the hollow potatoes and top it with grated cheese. Bake in a preheated oven at 200o C till cheese is golden brown. Serve hot. |
