Boil moong and mauth sprouts separately in two cups of water each with a pinch of salt and a pinch of turmeric powder for about three to four minutes. Drain immediately and leave them in a colander so that the water drains away completely. Peel, wash and finely chop onion. Wash and chop tomato. Wash, halve, deseed and chop capsicum. Remove stems, wash and finely chop green chillies. Peel, wash and grate raw mango. Mix sprouted moong and mauth with onion, capsicum, tomato, green chillies, roasted cumin seeds, red chilli powder, amchur powder, grated raw mango and oil. Mix lemon juice, chaat masala and salt and pour over salad. Mix well and serve immediately.
Note: Mauth is brown coloured gram which is a little smaller in size to the green garam (moong). It is generally sprouted and used. It is known as matki in Maharashtra where matki chi ussal is a very popular dish. |
