Corn tortillas 2

Tomato 1 medium sized

Onions 2 medium sized

Green chillies 4

Saffron a pinch

Walnuts 4

Oil 2 tsps + to deep fry

Vegetable stock 4 cups

Salt to taste

Lemon juice 1 tbsp

| Method to prepare Lemon and tortilla soup |
Cut tortillas into five by one centimeter strips. Wash and chop tomato. Peel, wash and chop onions. Remove stems, wash and chop green chillies. Wash and cut lemon into four. Dissolve saffron in a few drops of warm water. Shell walnuts and cut into four. Heat sufficient oil in a deep frying pan and fry tortilla strips until brown and crisp. Drain onto an absorbent paper and keep aside. Heat two teaspoons of oil in a large saucepan, add onions, green chillies and saute till onions are soft. Add vegetable stock and salt. Cover and simmer for twenty minutes. Add tomato and simmer for another five minutes. Stir in lemon juice, walnut pieces and saffron. Remove soup form heat. Add fried tortilla strips and fresh cream. Garnish with lemon pieces and serve hot. |
