Peel, wash, halve, deseed and finely chop cucumbers. Remove stems, wash and finely chop green chillies. Clean, wash and finely chop coriander leaves. Crush roasted peanuts to a coarse powder. Mix cucumbers with green chillies, peanut powder, scraped coconut, lemon juice and sugar. Heat ghee in a small pan, add mustard seeds and let them crackle. Add cumin seeds, stir-fry briefly and add this tempering to the cucumber mixture and mix well. Mix salt and serve immediately, garnished with chopped coriander leaves. |
